High Protein Gnocchi

Impress your family this holiday season with my High Protein Gnocchi that serves up 21 grams of protein per serving! Watch me make it.
All you need 👇🏽
2 cups cottage cheese (blended)
2 cups of unbleached, organic, all purpose flour (@kingarthurbaking is my go-to)
1 TBSP kosher salt
2 TBSP butter (@kerrygoldusa is my fav)
How to make it 👇🏽
• Blend the cottage cheese with a little water
• Combine it with the flour with a spatula
• Break a small piece off and roll into a ball then into a tube shape. Flour a cutting board and roll into long logs
• Cut the logs into small bits about 1”
• Cook in boiling water for about 3 minutes
• Transfer to buttered and salted non stick sauce pan on low-medium heat until golden brown
If you want to add a sauce you can. If you want to eat plain, it’s delicious that way too.
I served pure with steamed broccoli and carrots.
